    Q10: What is boza?
    A10: Boza (Millet-Ale) is a popular Bulgarian drink typical also of other Balkan countries. The boza is a thick, fermented beverage (containing up to 4 percent alcohol) with a sourish or sweetish taste. The boza is made of various kinds of flour (barley, oats, corn, wheat), but boza of best quality and taste is made of millet flour.

    Q11: What are the traditional Bulgarian alcohol drinks?
    A11: Alcohol is very much a part of Bulgarian culture. It is drunk by many at any time and for every occasion. The most used traditional drinks are:
    Beer - Bulgarian beer is palatable. The wide known Bulgarian brands are Kamenitza, Zagorka, Shoumensko, Pleven, Ariana. There are international brands made in Bulgaria like Tuborg, Becks, Heineken and more.
    Wine - high quality, low price; wines from Preslav, Novi Pazar, Suhin Dol, Melnik and Khan Krum (Shoumen Region) are regarded as the best, Sungularski Misket (dry white) is one preferred brand. Red is drunk in the winter, white in the summer, both with almost everything.
    Rakia - Bulgarian brandy, the national drink. High concentration of alcohol.

    Q14: What are traditional meals of Bulgarian Rhodopian cuisine?
    A14: One of the irresistible temptations of the Rhodopes is the wonderful cuisine. Known for their hospitality, Rhodopeans will welcome you to their homes as dearest guests and will serve you delicious specialties. Many of the recipes have come down to us through the ages carefully preserved in the years and enriched by modern generations. The Katmi or Morudnitsi are one of the favorite local specialties, prepared from thin batter, yogurt and eggs.
    Another popular dish is the 'kachamak'. Boiled corn 'kachamak' is served in two ways: in 'balls' or in a large baking tin, with melted butter poured and fried meat/bacon, cheese or curds on top.
    One must try the favorite dish of Rhodopeans - 'patatnik'. It is made of grated potatoes, eggs, onions and spices, and is baked in a frying pan.

    Q15: What types of Bulgarian Wine there are?
    A15: According to the Wine Law, wines in Bulgaria fall into the following categories:
    1. Wine without Declared Origin, but of declared variety or registered brand name. They constitute 5% of the total production of the quality wines.
    2. Regional Wines, also called Country Wines. These wines possess the original properties of the grape varieties they are made from Two varietal names can be mentioned on the label. They correspond to the category VIN DE PAYS (France) and LAND WEINE (Germany). These wines constitute 18% of the total production of quality wines.
    3. Wines of Declared Geographical Origin (D.G.O.) These are wines made from selected grapes originating from a particular geographical region. Origin is declared by the producer. This category constitutes 70% of the quality wines.
    4. Wines Of Controlled Appellations of Origin (A.O.C) These wines are made from grapes, originating from strictly defined and controlled micro-regional vineyards with a limited maximum yield of grapes per hectare and defined minimum sugar contents. These wines constitute about 2% of the total production of quality wines.
    5. `Reserve` Category This is a special category of wines aged in small oak casks with the purpose of extracting phenolic compounds from the wood, and then in larger oak casks. Reserve wines can be either of declared geographical origin, or of controlled appellation of origin.

    Q16: Bulgarian white wine from grape sort Misket
    A16: Misket is a traditional Bulgarian sort grape. The flake of the grapes is pink to red in colour, but it is a" material" of producing only white wines. This sort grows the best in the region of The Valley of Roses and partially in The Black Sea region. High quality wines from this sort are produced in winery Slaviantsi, Sungurlare, Banya en Aytos. The wine has a specific flavour (of herbs). It ages in oak barrels that strengthen the deep colour and the flavour of these wines.

    Q17: Bulgarian white wine from grape sort Muskat
    A17: It is imported from France. The wine has attractive and strong flavour as well as full aroma. During the ageing process, especially in oak barrels, the flavour does not develop but becomes rich in nuances. These grapes are appropriate for a long-lasting ageing process.

    Q18: Bulgarian wine from grape sort Riesling
    A18: The Italian Riesling is nowadays dispersed all over Europe. Bulgaria has a perfect climate for these grapes- in the North-east of the land Riesling "feels at home". The wine is produced in Evskinograd as well as in Varna. The colour is deep, yellow-green, with a lot of nuances that are typical for this sort and forms an interesting harmony. During the ageing process the flavour develops further and becomes richer in nuances. The taste is well balanced. These wines are potentially suitable for one long-lasting ageing process.

    Q19: Bulgarian White Wine from grape sort Traminer
    A19: Traminer comes also from France (Elzas), and it is also imported during the `70. At the moment famous producers of wine from this sort are the following wineries-Khan Krum, Targovishte and Shumen. It is really attractive, popular sort wines and it is preferred a lot as a drink. The colour is light, yellow to yellow-green and has often more nuances of roses. These wines are fine, elegant and have good balance between fruits and moreover a strength in taste
